Established in 2010. Mark Bitterman opened The Meadow in Portland Oregon in 2006. The original idea for the shop was to create a place that felt like coming home, surrounded by things he felt most passionate about: gourmet salt, artisan made chocolate, cocktail bitters, wine, and fresh cut flowers. The Meadow settled in an off-beat neighborhood surrounding Mississippi Avenue in North Portland; the homegrown vibe and close-knit business community were a natural fit from the start. Opening a shop full of salt, chocolate, flowers, and artisan cocktail bitters in the West Village of New York City was a natural for Mark, who has lived, dined, and played there off and on for many years. Mark Bitterman is selmelier and owner of The Meadow, a specialty food business with locations in Portland, Oregon, and New York City. He won a James Beard Award for his first book, Salted, and his next book, Salt Block Cooking, again pioneered new concepts in cooking. Mark teaches at culinary schools and restaurants around the country, and has been recognized as a Local Food Hero by Cooking Light and a Tastemaker in Food & Wine. He has been featured in The New York Times, The Atlantic, O, GQ, Rachael Ray, Wine Spectator, GQ, Esquire, and on The Splendid Table, All Things Considered, Bizarre Foods, CBS News, ABC News, Fox News, MSNBC, CNN, the History Channel, and more.
